Ingredients

2-3 medium

ripe bananas, mashed (1 cup) 

1¾ cups

all-purpose flour or almond flour

1 teaspoon 

baking soda 

½ teaspoon 

salt 

½ teaspoon 

ground cinnamon; optional 

2 medium

eggs

½ cup

melted coconut oil or avocado oil 

⅓  cup

honey  

¼ cup

BOOST® Original Nutritional Drink, Very Vanilla 

1 teaspoon 

vanilla extract 

¼ cup

dark chocolate chips

1 handful

chopped walnuts, raisins; optional

Directions

  • Pre-heat oven to 350°F, grease a 9x5 inch loaf pan and set aside. 

  • In a medium bowl, whisk flour, cinnamon, baking soda and salt. Set aside. 

  • In a large bowl, beat eggs, oil, honey, BOOST® Original Drink and vanilla extract  for 2 minutes. Stir in the bananas and gradually add flour mixture. Fold in chocolate chips and pour batter into greased pan, sprinkle with walnuts (optional)  

  • Bake for 50-55 minutes or until a toothpick inserted comes out clean. Cool for 10 minutes, slice and enjoy!
