Blackberry Muffins Recipe
all-purpose flour
whole wheat flour
rolled oats
baking powder
baking soda
cinnamon
sea salt
BOOST® Original Nutritional Drink, Very Vanilla
egg
vegetable oil
nonfat Greek yogurt, plain
honey
vanilla extract
blackberries, fresh
Preheat the oven to 375F. Line a muffin tin with muffin cup liners.
In a large bowl, combine all-purpose flour, whole wheat flour, oats, baking powder, baking soda, cinnamon and sea salt.
In a medium bowl, whisk BOOST® Original Drink, egg, vegetable oil, Greek yogurt, honey, and vanilla until smooth.
Pour wet mixture into dry ingredients, stirring until just combined.
Fold in blackberries.
Fill muffin cups ¾ full.
Bake for 22-25 minutes, or until a toothpick comes out clean.
